A variety of reasons led to its use as a catch–all for the Nazis’ attempt to exterminate European Jewry, but mainly because of its relation to Judaism and the fact that (like the sacrificed animal), the Nazis completely decimated the victims, attempting to utterly extirpate them — a bit like how the fire devours the sacrificial animal so totally.
