From a bodybuilding point of view; military presses, lateral and side-lateral raises and reverse flys will work and build muscle on your shoulders. High reps and medium-low weights for muscular endurance, medium-low reps with high weights for power and explosive strength. But I don't know anything about MMA training so if that's what kind of training you were after then I'm not too sure.
