I'm sure most fighters do squats. Especially Wrestlers.

Maybe they just never show it. There are variations of squats.

I saw Chris Leben doing rack-pulls of UFC Countdown, those are basically what they call "half deadlifts" or "partial deadlifts"

More people should though, they are very good exercises for almost any sport
