If you're just starting out, 250 lbs - 300 lbs should be plenty. If you're really serious about weightlifting and what not then you'll eventually need more weights. You'll definitely be safe with 500 lbs most likely (depending on your size).
As for the barbell, go with an olympic sized one. I have a 45 lb barbell like almost every other gym I've attended.
