Yeah but considering how the question was asked I just figured any style we have seen in the cage qualifies. How can anyone not enjoy watching that style?

Each discipline brings impressive moves
Demian Maia's Jiu-Jitsu: Incredible transitions and superb finishes.
Karo Parisyan's Judo: Fantastic Judo throws.
Chael Sonnen's Wrestling: Powerful drive and commitment to take you down and keep you there.
Edson Barbosa's Muay Thai: Hollywood kicks deserving an Oscar.
Machida's Karate: Unique stances, distance, precise counters.
Anderson's MMA: He came from Muay Thai, but now he impressively and unpredictably mixes well a bit of everything. Fantastic to watch the walking definition of a complete Mix Martial Artist.

Presently after seeing how many fights over the years I get pretty amped up when I see things that have never been done before. Currently Anderson and Pettis are the only two who execute shots only seen in video games or the movies of course. So I'll go with Capoeira. It's such a unique discipline. Blanka anyone...
Pettis vs Cerrone: Cartwheel kick
Anderson vs Patrick Cote: He goes into a Capoeira dance then lunges at em.
Tae Kwon Do is pretty bad ass with the aerial kicks.

That aside, I really like all aspects of MMA that aim to finish the fight or at least advance the fight to get a better position to finish (so that includes Judo throws, wrestling takedowns and grappling transitions, but excludes lay'n pray and wall'n stall)

I go nuts when someone lands an awesome sweep... the one Condit did on stun gun was amazing.

Actually Judo throws are pretty slick! Karo was one of the best at it.

I like chain wrestling and guard passing. Something like Cain vs Jake O Brien is one of my favourite kinds of performances.

Why don't you go and watch actual Muay Thai? Not Sadollah beating a complete an utter useless "after two mins Baroni".
