Not sure why this got moved to general MMA since it was UFC specific submissions, but keep them coming, some beauties so far
One of my favourites was Hazeletts armbar vs Josh Burkman. That was pretty slick.

Can't go wrong with a leg triangle off your back, transitioned to an armbar
Nothing more impressive than a gogoplata or an omoplata though

Paulo Thiago's d'arce on Swick for sure. Most submissions wouldn't be quite as great on pavement ("on the street"), gotta give up position to finish, hard to make your opponent go out, you could get slammed, etc...
But that submission, Swick was out cold in what? Three or four seconds? Paulo Thiago in a dominant, damage-free position the entire time. If I could pick a sub to land every time it's that one.

I'm a big fan of the Ezikel choke... So many guys get to mount and its right there for the taking and no-1 goes for it.
