Other than the Scissor sweep, I usuallly have no idea how to sweep, and I can't use the scissor sweep in no-Gi training. What other sweeps are out there?

From full guard, grab the back of your opponents knee and roll your hips to forward and to the side you are grabbing. With the other hand you can either grab the lapel of your opponent's gi or, for no-gi, grab their ear, hair or just brace your hand against their cheekbone.
Roll the hips fast enough that your body gets up and you should be in a mounted position.
There are a lot of bridge/upa sweeps from half-gaurd that work real well. A lot of guys try to transition from half-gaurd to full without even thinking about sweeping, but doing so can be real effective especially if they are already pre-occupied. At the very least, you create enough space to begin pulling full-gaurd if the sweep fails.

Elevator sweep, Knee sweep, Hook sweep, hip bump sweep, Are a few names of sweeps ive learned recently. Oh and the scissor sweep can be used with no gi. Grabbing behind the head or an underhook can subsitute for grabbing the gi lapel and the wrist for the gi sleeve. It makes it a little trickier but it works.
Use your butterfly guard for sweeps and standups. It is pretty effective for me. I actually use the butterfly guard almost exclusively but i am more of a striker so i guess it depends on your preference
