I'm just looking for a few tips to avoid the guillotine or headlock when engaging somebody in a wrestling match. Also, a brief explanation of how to get out of it when caught in a headlock/guillotine would be highly appreciated.

Put you hand over the should and on the back of their hand opposite of the one choking you. Try to put your head on the floor and bridge your body so there is space between your neck and their forearm. Try to slide your free hand inbetween the forearm and neck and create more space. Now wait ntill they finally figure out they don't have the choke, or try to pull their hand off you.

Crossface! Bas Rutten says it soo often, "he should crossface now". It works really well for getting out of them, also make sure you STAY CALM, I think that is the most important thing. The links above me are very helpful as well
Anyone who has done bjj will probably not use a headlock. It is relatively easy to escape and leaves you in a really poor position once someone gets out of it. e.g. if they have a headlock on you you can turn your head in towards them, get to your knees, get the leg closest to them around their body and over their leg, get a hook in, drive your hips forward - this will make it near impossible for them to hold the headlock and you have their back and usually one arm too. There are loads of submissions from here.
This is just one way out. there are several others and all of them leave the headlocker vulnerable
i only use a headlock type and it has been used against me successfully in a koshi guruma(head and arm), and i usually land in kesa gatame, and pin or go for arm bars...
if my opponet gets a straight headlock on the ground unless it is a neck crank i really don't worry to much, they usually loss grip.
guillotine you are fine if your not standing and he is lifting you, or if your down he is controling your hips(your under his mount or he has you wrapped with his legs), most people are not strong enough to to finish with brute strength if you relaxed, but there are little things i do to save my grip when i get this hold. i get a cross lapel grip on my own gi with your head locked under my armpit to save me from burn out and to also free up my other hand to assist with my attack.
there is also the inner thigh/groin grip.. the inner thigh is very senstive. have one of your friends get the best head lock they can on you and you grip their inner thigh as hard as you can.

In a wrestling match a guiloutine is illegal. An arm would have to be included which turns the move into a "front headlock."
From there, you could grab a leg. If you can't advance your position, it will become a stale-mate and you will be returned to neutral position.
Effective hand control (breaking your opponent's clasp).
With the front headlock, your defense is largely based on what your opponent is attempting to do with his position.
Some guys will circle and then toss their opponent, as with an arm drag, and try to spin behind for the takedown.
It is also common for the wrestler to roll through with the front headlock applied and then sliding into a half nelson when on top. This is a very exciting move to watch when it is executed properly.
