Id have to say Gomi. There was a long stretch where the guy was fighting all the time and having a ton of success. He has great stand up and great wrestling. I think he will still return to his old form once he starts fighting a lot like he used to. I would love to see him smash Aoki and a fight between he and Kawajiri would be explosive.

Think it just has to be the Gracie Hunter Kazushi Sakuraba. I've not seen too many of his fights, probably 5 or 6, but the ones I have seen, and the stuff I've heard about him has left me really impressed. He's a legend of the sport.

As most people say got to go with Sakuraba. Most amazing and graceful wins and most utter destruction when he loses. Always fun to watch and root for.
