There is one possibility. Have you ever eaten foie gras (Frency-style goose liver)? As you may or may not know, it is made by feeding (or sometimes force-feeding) the geese on an incredibly rich and buttery feed until they are obese and the bird is soon to die of liver failure. Then they kill the goose and prepare the liver- often as pate. The result is a liver that is incredibly soft and rich and melts in your mouth. It is incredible, but rather cruel to prepare and very expensive.
This would be a good way to get your MMA fighter's liver up to a good level of tenderness. Some of the chunkier fighters (I'm looking at you Tim Sylvia) wouldn't need force-feeding, I am sure.
