there are a billion different submissions and a billion different ways to do them in a billion different situations.
how are they gonna incorporated such complexity and realism? what buttons do you push to get the move you want? there are a trillion different moves, so how's that gonna work with only the 5-6(?) buttons that consoles have on their controllers.
what are you gonna press to get a submission or a clinch? up down left right 1/2 counterclockwise a+b?
to actually make it a realistic game is very unlikely in my opinion.

your absolutely right, it's pretty tough to do, you obviously couldn't do everything.
in mma, there are flying knee's, jabs, left hooks, overhand rights, right crosses, muay thai clinches, body locks, double leg takedowns, leg trips, sweeps of the ground, triangles, RNC's, armbars, mounts, GnP, putting hooks in, footwork, head kicks, leg kicks, body kicks, foot stomps,...

and probably about another hundred million moves if you truly encorporate all of mma
tough to say which ones should get the most focus..
you could have specialty moves, like GSP's spinning back kick, cro cop's LHK, Rampage's slams...
damn, i want the game....plz figure out a way to pack it all in
