Right now it sounds like you're not going to be competing anytime soon so you want to continue building lean muscle while burning fat, which is the good way to lose weight.
When fight time comes around, one or two days before is when you actually start cutting weight, which is mostly water weight, but anytime you go into starvation mode you lose muscle, so you'll lose a tiny bit of muscle during your cutting days.
So basically, keep doing the weights, plyometrics, and cardio. Build yourself a very high metabolism. Then when your fight comes around, you do cardio in layers of clothes to lose water and eat SUPER TINY amounts of food such as almonds, spinach, or some type of protein. No salt, no sugar.
