im 5 11 about 260 also on a diet, trying to get into amateur MMA. The one im doing right now seems to be working.
Carbs limited to breakfast only.
1 salad for lunch.
Lots of eggs and chicken, add fresh veggies as much as possible
tons of fruit
As little sugar/fatty/fried foods as possible
Add wheat germ and ground flax seed to whatever i have for breakfast
I lost about 10 lbs over the last 3 weeks and more importantly i have a ton of extra energy. I just need to get into a daily workout routine and i should be good to go in a few months!

there are tons of articles on dieting etc so check here, sherdog forums, internet OR talk to a local nutrionist to help you out with a diet.

I mean this "basic" outline of your diet is fine but if your "training" to get into MMA limiting carbs isnt the best idea. You NEED carbs to train

Believe.

I really dont know much but drink alot of water. Ive been drinking only water with a occasional pop for a few months, and Ive lost alot of weight. The best thing is after a while you loose any real need to drink crappy stuff. Hope this helps

Summer is coming up and I can tell you if you get a construction/landscaping job you'll drop weight off pretty quick.

You're diet looks good.

Get some cardio in(treadmill, airdyne etc)

Also High Rep/Low Weight Weight Training is good for building endurance and burning fat

A decent Fat Burner would be good but I wouldn't recommend it highly. Lipo 6 seems to be very popular

I agree 100%. Carbs and sodium are essential to high performance athletes

I also forgot to mention no premade sugary drinks. This limits me to tea, water, and coffee. Ive been off of soda/juices for months now and if i ever drink soda now it gives me a headache and unsettles my stomach. I dont limit the carbs, just only at breakfast. Toast, cereal, oatmeal, etc i eat about 1000 calories for breakfast
