If you get sick of the same old vegetables you could chop up red and yellow peppers (they have way more beta carotene) with ground beef and black beans, or you could mix pasta with ham or chicken, banana peppers, (you know, like pepperoncini) and a bunch of vegetables and chickpeas, for example. I like putting edamame in pasta also but I can't find any where I live that aren't overpriced.
It sounds like you have access to a fridge but not a microwave or stove, right?
