Well the first thing you need to understand is every person is different, and recovery times are going to vary across the board. You will need to find out through personal experience whether your body recovers better by having a weight training day come before or after a MMA/BJJ training day. This is something that I would set up for myself, but keep in mind that I am already used to being in the gym 3-5 times a week, and sometimes more than once per day.
Sunday - Rest
Monday - MMA/MT
Tuesday - Weight Training
Wednesday - Rest
Thursday - BJJ
Friday - Weight Training
Saturday - Rest
What you have here is 4 days of training with 3 days of rest. For your average person, this would be a pretty good taxing load on your system. The two consecutive days off on the weekend will ensure a good recovery, as will the one day somewhere in the middle of the week. If you find that this isn't enough and that you might be able to do more, then feel free to tweak however you wish, but I'm sure something like this will be more than enough.
