Just for fun, I looked over the Zuffa era UFC fight cards whenever I had a minute or two free and counted up the number of times elbow strikes ended a fight by (T)KO and submission or by cuts.
There are four fights where I don't remember the strike that caused the cut, I'll put them on the end, in case anyone has the info.
There are eight cut stoppages by elbow, but at least two of them were standing elbow strikes.
Depending on how you count elbow strikes that were part of GnP that ended a fight due to (T)KO/sub, there are either 27 or 36 fights that elbows ended without a doctor's stoppage. It's 27 if mixed GnP including elbows is half an elbow stoppage and 36 if mixed GnP including elbows is counted as a full elbow stoppage.
That's over 173 events and 1695 bouts.
Even if all four fights I couldn't recall ended because of elbow strikes leading to cuts, it would be 12 of 1695 bouts, or 0.7% of all fights. There were at least 21 other injury stoppages, but there might be more. I wasn't looking for other injuries, so I might have missed some.

UFC 39 Sherk vs. Radach
TUF 2 Finale Guillard vs. Davis
UFN 19 Stephens vs. Buchholz
