Always big name fights in Toronto and Montreal?
Why does UFC always put big name fights in Toronto and Montreal?
Montreal: GSP, Machida, Spider, GSP, GSP again in 2 months
Toronto: GSP, Jones, Jones
Is it because most Canadian fans only buy tickets for big name fights?

Canada and Brazil are probably the two biggest markets for MMA, with Canada having a stadium show and Brazil supposed to get one this year until complications arose. The US has yet to have one.
I'd actually like to see a non-Brazilian main event in Brazil though which is a little off topic but kind of relevant in this topic, UFC 152 and 140 all had non Canadians in the three featured fights, Silva/Leites and Machida/Shogun II have both headlined cards in Montreal too.

Because they sell out faster than anywhere in the world, unlike Brazil they pay US rates, the PPVs still broadcast at the same time, and the highest selling UFC fighter is Canadian and it's a convenient location for him. Most profitable combination ever.

The answer to this is Brazil has 50x more quality fighters than Canada. So they are able to put top Brazilians on Brazilian cards. Other than Rory and GSP Canada has nothing going for them....so obviously they will have to use more non-canadaians for their main card.
Also, as for why they get big fights....it is simple. They are in the same time zones as the U.S. Canada as good as their fans are wouldn't get all those huge fights if they switched spots with England. England gets no big fights because it is on live at 3pm here in the States. Pretty simple really.
