There are so many waaaaaay way back as well that are worth checking out. My best advice is watch all MMA, not just good fights.. I mean, you learn so much about the sport while watching even the most boring matches. Well at least I do anyway.. I watched Koscheck vs Sanchez probably four times.

Bliz has a little shameless behaviour in the past
My favorite fight is probably Griffin vs. Bonnar just because that's when I was just getting interested in MMA. Also because they wailed on each other the entire time.

Great fight, and one of my all time favorites. Frank making CRAZY FACES~! ruled. Rutten's second fight with Maurice Smith was great, as well, and his fight with Funaki(09/07/96) is my favorite Bas fight.

Thinking on it, I do remember watching a Shamrock Vs Tito fight, not sure if it was the first one, but I didn't like it very much, seemed one sided for most of the fight and I expected Shamrock to do some damage.

That was Ken Shamrock vs Tito Ortiz. Frank Shamrock vs Tito Ortiz was a whole 'lot better, and more competitive.

Here is a link to Round 4 of Tito Vs. Frank. I could only find rounds 1 and 4. I suggest you try to watch the whole fight though. It really is a good fight.

I completely forgot that theres two Shamrocks! Thanks for the clarification, I'll be sure to check their fight out.
Thanks again to all of the posts, looks like their is lots of good fights and fighters I've never even heard of. Also, someone asked if this was UFC specific, a good fight is a good fight so Pride counts. I typically don't like Pride as much though, since the ones I've seen the ref stands the guys up after about 10 seconds on the ground, not enough time to do damage. They do have some nice stand up though.
