While I realize "night of champions" isn't doable, UFC 100 does require a card that is by far better than any card from any organization (including Pride) before. Indeed atleast 2 title fights, but on top of that whole main card has to be full of awesome fights (super fights & interesting rematches basically) that would sell as main event fights on their own.
They can also have all champs fighting on the card, just have them in non title matches either in super fights against each other, or someone else outside their divisions. GSP vs. Franklin, Silva vs. Liddel or even GSP vs. Silva would be 3 good examples.
Its not really hard to make a best card ever with the fighters ufc has now, Pride kept having new "best card ever" card after card with even less fighters, then again they didn't have american athletic commissions messing up their plans so it was easier. :P

Agreed. I know Forrest would take it, but its not a fight I even want to see because it would be pretty boring stand up "war" with hit and run tactic by machida vs. Forrest abusing his reach with jabs and leg kicks.
