Off the top of my head, in no particular order:

Wand - Hendo Rubbermatch

Wand - Chuck 2

Machida - Whoever the current LHW champ is at the time

Hendo - Chuck

Thiago Alves - Sanchez (so close!!!)

Hughes - Serra

Don Frye's Mustache > Kimbo's Beard

Of course Randy can wrestle with him. Especially in the later rounds, when Brock hasn't finished Randy and Brock gets tired.

Brock is going to be so sloppy in the later rounds, Couture can drop him at that point.
Brock's not the best wrestler in the world, but has Randy ever faced anyone who will have 60lbs on him on fight day? No. There are reasons why there are weight-classes in amateur wrestling, and that's because smaller guys will not be able to hang with guys like Lesnar based on strength alone.

I really don't like picking Brock Lesnar but it's hard not to stylistically. Randy's got better striking, but knockout power? Hell no. Has Randy got a submission game off his back? Nope, not like Fedor, Nog, Mir, Werdum, or Barnett. Will Randy have better cardio? It's quite possible, but we can't make assumptions on Brock, especially when we've never seen him go more than 3 rounds.

Usually the man with the better wrestling dictates the pace of the fight and where it goes. I really don't think Randy will be the one taking Brock down, so I hope to God that Randy's training camp is based mainly on working for submissions from his back.

As for match-ups I'd like to see:

Nogueira vs Couture
Nogueira vs Werdum 2
Lesnar vs Carwin
Yoshida vs Parisyan
Shogun vs Griffin 2

1- GSP / A Silva
2- Nog / Randy
3- GSP / BJ 2
4- A Silva / F Griffin or Lyoto (know this one's impossible)

Just read your comment, there is no way this bout can happen as the guys are training partners. Unfortunately not even a chance.
