I am seriously wondering what BJ's game plan will be against a wrestler/GnP/enough defensive BJJ to not get subbed/diverse striking.

The GSP now is way different than the GSP from UFC 58: USA vs. Canada or when he got TKO'd by Serra.

That said, I hope it's a GREAT fight. My heart says BJ... My head says otherwise.

I think his gameplan will be pretty much the same as the Sherk fight. Try and keep it standing and work the jab. If it goes to the ground he will just rely on his bjj instincts until he gets back up again.
