I think Koscheck and Daley makes a lot of sense. It will establish Daley as a top contender as long as he has a good showing, he really doesn't have to win to prove himself. With the KO power he has, if he lasts and does well against Koscheck he will have proven himself, maybe not for a title shot right off the bat, but at least that he should remain at the top of the heap. On the other hand if he defeats Kos, the UFC has themselves another Brit to promote against GSP. Plus, assuming Hardy loses to GSP, Hardy will be set to fight Koscheck and end their little feud. The only way the UFC loses in the deal is if Koscheck just makes Daley look like a fool.
So simply put, this is the safest and most promotable scenerio for the UFC.
