Brock Lesnar - Clipping Randy in the back of the head, that was sweet. (I don't like the guy much, but you can't deny he's becoming a solid fighter).
Machida - His trip of Thiago early in the fight, the first time he trips him and takes him down. It's not a huge thing, but everytime I see it, I'm very impressed, it just looks so awesome.
Silva - The last shot of the Forrest fight, and the entire Leben fight.
GSP - his leg trip of Matt Hughes in their second fight, I can watch that many times over.
Penn - His RNC of Kenny, mainly because I'm not a fan of Kenny and I loved him sinking in that choke against a guy who thinks he is above the rest in BJJ and was supposed to have this ground game that can handle BJ because of his win over Stevenson.

Well For Lyoto a I watched a fight that amazed me how he finished him. It was against Michael Mcdonald, he like straight made him tap from his forearm to the throat its so simple yet effect Sub.

Most people didn't see this clear head shot Lyoto got on Rashad because it was so fast but here was a good angle on it....

Silva has that awesome upward elbow KO from like MFC or KotC or something. Or if you're looking for an easy one basically any exchange from the Leben or Griffin fights.
GSP has a pretty sweet head-kick that wobbled the hell out of Hughes in their second fight. Or any of the times he used that leg kick/superman punch combo.
Lesnar's most impressive moment in my eyes was locking up Murr's arm and uppercutting three quarts of blood out of his face while on top of him.
Lyoto throwing Thiago Silva to the ground then completely drilling him in the face with a follow up punch was pretty swell.
BJ's super fast KO of Caol Uno(?) where he runs out of the octagon and goes back to the locker room immediately after.
