You did see Santiago's last UFC stint right?
He's not got an iron chin by any means and if Stann can put away Chris Leben who has already KO'ed Santiago, then I don't think it's impossible for Stann to finish Santiago.
As for what card is better, a card with GSP/Shields, Aldo/Hominick, and Couture/Machida is hard to beat, and having Struve/Browne over Alves/Story and Torres/Picket decreases it's value quite a bit.
