You can happily pick up and play Skyrim without playing any of the other Elder Scrolls. I've only played Oblivion before Skyrim, and Skyrim is set 150 years since Oblivion.
They're stand alone games within the same world. The other games are referenced in Skyrim, but it's it's own game, own plot, own storyline.
In fact the actual 'Elder Scrolls' were barely mentioned inside of the games until Skyrim.
Fitch as a dude is awesome, I'd love to slay some Dragons with him.
